Puff Pancake

I've been making these since I was a little girl. I make them all the time for breakfast for my boys. They are so easy to make, and so delicious to eat!



2 Tbs. butter

3 Eggs

3/4 C. Milk

3/4 C. Flour

2 tsp. Sugar

1 tsp. Vanilla

1 tsp. Cinnamon



Place butter in a 10 inch cast iron skillet. Place in 425 degree oven for 2 -3 minutes until butter is melted. Meanwhile place everything else in a blender and process until smooth. Scrape sides if needed. Pour into prepared skillet. Bake uncovered at 425 degrees for 16 - 18 minutes or until puffed and browned. Dust with powdered sugar.
Serve with warmed syrup.

Sometimes if I remember I add ground Flax seed,
the boys can't tell.
Since I have 4 boys I have to make 2 Puff Pancakes.
And there is rarely any left!


It's really fun to watch bake too!

Those are really neat! I have never had one but they look easy. Plus I do have a cast iron skillet!

OH MY GOODNESS those look yummy!!! I wonder what else could be used instead of the Cast Iron Skillet though?? hmmmm

When my mom and I made them,when I was little she used a glass pie plate. I've always had the iron skillets so I havent tried it. But Im sure it would work.

Oddly enough I don't remember mom making these and I don't remember having them at your house. I'm glad I finally have the recipe now though! :) Do you eat them just like that or put something on top of them? This looks like a great way to put on the 5 pounds I just lost! :)

LOL I'm such an airhead today, you already said powdered sugar and syrup. I haven't been able to think straight since Ethan's doctor appointment today.

Neat idea. For some reason we don't have a cast iron skillet. I'm sure we'll get one eventually..
