This salad is SO easy. It's hard to even call it a recipe. Because basically you just throw in whatever you want. It's a great way to use your fave veggies!
1 to 2 lbs of pasta cooked, drained and rinsed with cool water Spaghetti or Bow Tie work the best
Red Onion, chopped
Cucumber, chopped or sliced
1 each red, yellow, green bell peppers - sliced and seeded
1 can sliced olives
Carrots - sliced or shredded (your choice)
You can also add 1 can of each kidney beans, and garbonzo beans - rinsed and drained
1 bottle of your fave italian dressing - I like to use Zesty or Red Pepper Italian dressing. I also look for a light version
If your dressing isn't providing enough seasoning you can add salt, pepper, paprika and red pepper flakes to suit your tastes.
Throw it all in a large bowl, stir it up, and eat! Store leftovers in an airtight container in the fridge. Makes a great dish to take to BBQ's!
